½ cup olive oil
3 tbsp red or white wine vinegar
2 medium garlic cloves, crushed or minced
1 tsp Dijon mustard
2 tbsp lemon juice (about 1 medium lemon)
1 tsp dried oregano
¼ tsp salt
¼ tsp black pepper
- Place all ingredients in a wide mouth mason jar.
- Blend using an immersion blender until smooth and creamy, about 15 seconds.
