This Blue Chia Pudding is a fun and creative snack, breakfast or dessert that’s absolutely packed with nutritional goodness! It’s made with chia seeds, plant milk and blue spirulina powder. Oh, and did I mention that it’s also refined sugar free, gluten free, vegan and paleo friendly?

You will need: chia seeds, coconut milk, plant milk, blue spirulina, maple syrup and vanilla.

Mix all ingredients in a jar or airtight container.

Let the pudding sit for 10 minutes, give it a stir, close the lid and place in the fridge.

Serve on its own or layered with yogurt and topped with blueberries.
