Easy Rhubarb Cake is a quick, delicious and healthy dessert that can be made with fresh or frozen rhubarb. This cake is loaded with a whole pound of rhubarb and every bite has heavenly pops of juicy, sweet and sour rhubarb goodness.

You will need: flour, almond flour (optional), sugar, plant oil, vanilla, eggs and rhubarb.

Slice the rhubarb into 1 inch thick pieces.

Sift flours, baking powder, baking soda and cinnamon.

Cream together eggs and sugar in a bowl of a standup mixer (or use a hand mixer). 

FIt should be fluffy and double the volume.

Pour in oil slowly while the mixer is going. Add vanilla and flour in 3 equal parts. 

Transfer to a round spring form.

Add sliced rhubarb, pressing lightly into the batter.

Bake in preheated oven until golden and a toothpick comes out clean.

Let the cake cool, take out of the spring form and serve dusted with powdered sugar.
