Greek Chickpea Salad is a perfect meatless summer dinner or side. It’s made with canned chickpeas, sweet cherry tomatoes, red onions, crunchy cucumbers and peppers, feta cheese and kalamata olives.

You will need:  cherry tomatoes, cucumbers,  yellow bell pepper, red onion, canned chickpeas, kalamata olives and parsley leaves.

Make homemade Greek dressing by mixing olive oil, dijon mustard, lemon juice, garlic, white wine vinegar and spices.

Cut up all vegetables, feta cheese, chop parsley leaves and mix with drained chickpeas in a large bowl. 

Add dressing and mix until well combined. 

Serve on its own or on a bed of crunchy lettuce.
