Purple Blueberry Lemon Cookies


Purple Blueberry Lemon Cookies have an intense blueberry flavor and color thanks to incorporating mashed frozen blueberries into the dough. They are made with a mix of regular and almond flour which gives them nice soft and chewy texture and an extra boost of protein.

You will need:  butter, almond flour, all purpose flour, frozen blueberries, lemon, sugar and baking powder.

Microwave frozen blueberries to thaw them.

Mash thawed blueberries with a fork until smooth and jammy.

Cream butter and sugar together until white and fluffy.

Add mashed blueberries and lemon juice. Beat until the dough is pink.

Add all purpose and almond flour in 3 equal parts together with lemon zest.

Purple, smooth cookie dough should form. Chill in the freezer for 30 mins.

Using a small cookie scoop drop 12 dough balls onto a prepared cookie sheet.

Bake for 9-11 minutes. Flatten hot cookies with the back of a spoon, if desired. 

Cool on a cooling rack and enjoy!
