Tofu Egg Roll in a Bowl is a vegan version of the popular egg roll in a bowl that’s typically made with ground meat. Seasoned browned tofu crumbles work very well in this quick and satisfying cabbage and veggie stir fry.

You will need: - extra firm tofu - cabbage or coleslaw mix - red bell pepper - carrot  - onion - garlic and ginger - coconut aminos or soy sauce - peanuts - spices and seasonings

Press tofu in paper towels to remove water. Then crumble into a pan.

Add coconut aminos, garlic powder, salt and pepper and cook until brown and crisp.

Set tofu aside and cook veggies in the same pan until softened.

Add cooked tofu crumbles, peanuts and more seasoning.

Add more coconut aminos and chopped cilantro, if desired.

Serve drizzled with spicy peanut sauce (peanut butter, lime + sriracha).
