Vegan Valentine's Day Almond Shortbread Cookies

These gluten-free Healthy Almond Shortbread Heart Cookies are a simple and elegant cookie recipe made with only 5 simple plant-based ingredients. The combination of almond and coconut flour makes for the best vegan cut out cookies that are perfect for Valentine’s  Day or just because.

You'll need almond flour, coconut flour, coconut oil, maple syrup and almond extract.

Mix all ingredients together in a bowl with a spatula.

A smooth dough will form.

Make a dough ball and place on a piece of parchment paper.

Roll the dough to about 1/4 inch thick between 2 sheets of parchment paper.

Cut out cookies. Keep gathering leftover dough, roll again and make more hearts.

Place on a cookie sheet and bake at 350 degrees F.

Melt dark chocolate chips with coconut oil.

Dip the cookies in chocolate and add pink sprinkles.

Chill in the fridge for 15 minutes and enjoy!
