Ingredients

  • ½ cup olive oil
  • 3 tablespoon red or white wine vinegar
  • 2 medium garlic cloves crushed or minced
  • 1 teaspoon Dijon mustard
  • 2 tablespoon lemon juice about 1 medium lemon
  • 1 teaspoon dried oregano
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  • Place all ingredients in a wide mouth mason jar.
  • Blend using an immersion blender until smooth and creamy, about 15 seconds.

Notes

You can store this dressing in a jar or airtight container for up to 5 days in the fridge. Give it a stir or shake right before dressing your salad.
If you don't have an immersion blender, you can still make this dressing in a mini food processor, a standup blender or a mason jar (just shake all igredients together in a lidded jar until combined).
