Instant Pot Jerk Chicken is a super flavorful and easy chicken dish with the right amount of spice, smokiness and a note of sweetness. Serve it in a rice bowl, salad or wrap for a no fuss dinner or lunch.
1 ½lbboneless skinless chicken thighs or breastsI used 6 thighs
2tablespoonsjerk seasoningstore bought or homemade (see above)
2tablespoonsolive oil
2clovesof garliccrushed or minced
1pieceof fresh gingerthe size of one garlic clove, grated or minced
1cupof wateror low-sodium chicken broth
Freshly squeezed lime juice and chopped cilantrofor garnish
Instructions
In a small bowl mix together jerk seasoning, oil, minced garlic and ginger until thick paste forms.
Remove most visible white fat from the raw chicken, then add the jerk paste and mix until evenly coated. The paste will be thick so it will take some massaging to get into all nooks and crannies.
Pour 1 cup water or chicken broth in the Instant Pot, then insert the trivet in and nestle the chicken on top in one layer.
Close the lid and cook on high pressure for 15 minutes.
Let the pressure release naturally for 15 minutes, then release the remaining steam manually.
Take the trivet out and place the chicken in a bowl. Roughly shred with 2 forks. Pour in some of the sauce, if desired.
Squeeze some lime juice over the meat and garnish with chopped cilantro, if you like.
Serve in wraps, salads, rice bowls or on its own with a side of slaw.
