Healthy Rice Krispie Treats

Ingredients

  • 3 cups brown rice crispy cereal such as Nature’s Path Crispy Rice
  • 1 package no sugar marshmallows I like Max Mallows
  • 3 tablespoon butter
  • ½ cup almond butter

Instructions

  • Melt butter in a medium sized saucepan or pot with a thick bottom on low heat.
  • Add almond butter, marshmallows andvanilla. Simmer while stirring until everything is melted.
  • .    Take thepot off the heat, add rice crispy cereal and stir with a wooden spoon orsilicone spatula until all the cereal is coated in the almond butter mixture.
  • Immediatelytransfer to the paper lined pan and push down with the back of a measuring cup to create one even layer.
  • Place inthe fridge to chill for at least 30 minutes.
  • Cut into squares and enjoy!

Notes

Almond butter can be swapped for natural peanut butter or cashew butter.
When mixing the rice cereal into the melted marshmallows and nut butter, the mixture may seem dry at first. Keep stirring until all cereal is evenly coated, then transfer to a prepared baking pan immediately and press down. It sets fast!
You can buy brown rice crispy cereal and no-sugar marshmallows at some natural food stores or online on Amazon or Thrive Market.
