Polish Gingerbread Cookies

Polish Gingerbread Christmas Cookies or Pierniczki are wonderfully soft and spiced with aromatic cinnamon, ginger and nutmeg. Decorate them with royal icing or white chocolate and stud with nuts and raisins, if you want, although they are also delicious on their own.

Melt butter, honey abnd spices together.

Mix together dry ingredients.

Add honey-butter mixture, egg yolks and sour cream.

Mix the dough with a spoon. Refrigerate overnight.

The next day divide the dough into 2 parts. 

Roll the dough out and cut out cookies. Repeat with second part of the dough.

Place the cookies on a parchment paper lined baking sheet.

Bake until golden. 

Decorate with royal icing and sprinkles.
