Low Carb Sushi Bowl with Smoked Salmon

Ingredients

  • 8 ounce cooked cauliflower rice
  • 3 oz smoked salmon cut into thin strips
  • 3 oz English cucumber julienned or sliced into thin strips
  • 3 radishes julienned or sliced into thin strips
  • ½ medium avocado sliced or chopped
  • 3 tablespoons coconut aminos
  • 1 tablespoon rice vinegar
  • 1 teaspoon toasted sesame oil
  • ½ teaspoon Everything Bagel seasoning

Instructions

  • Make the dressing. Whisk together coconut aminos, rice vinegar and sesame oil in a small bowl and set aside.
  • Assemble the sushi bowl. Start with cold cauliflower rice, place the smoked salmon in the middle and surround with cucumber and radish strips and avocado slices.
  • Drizzle with the dressing and sprinkle with Everything Bagel seasoning before serving.

Notes

Instead of cucumbers and radishes you can use other veggies, such as matchstick carrots.
For a spicy salmon bowl, swap the dressing for Sriracha mayo sauce (mayo + Sriracha + coconut aminos).
Coconut aminos can be swapped for soy sauce and Everything Bagel seasoning can be replaced with toasted sesame seeds or furikake seasoning.
