Caesar Salad Dressing Without Anchovies
If you're a Caesar Salad lover but not a fan of anchovies, this recipe is perfect for you. This creamy dressing is delicious, easy to make and has the right balance of tangy and salty flavors. With just a few simple ingredients, you can whip it up in no time and add some zing to your salads.

- ½ cup mayonnaise
- 1 clove garlic
- 1 teaspoon dijon mustard
- 2 tablespoon fresh lemon juice about 1 medium lemon
- ½ tablespoon capers drained
- 1 tablespoon capers brine
- ¼ cup grated parmesan cheese
- ½ teaspoon black pepper freshly milled
Place all ingredients in a mini food processor (mini chopper).
Process until mostly smooth.
Taste and add a pinch of salt if the dressing is not salty enough.
This recipe makes about ⅔ cup of dressing.
If the dressing is too thick, thin it out with more brine from the capers jar, lemon juice or a splash of cold water.
If you don't want to use a food processor, mince the capers and garlic and whisk it together with all the other ingredients in a small bowl.
Substitute vegan mayo for regular mayo and nutritonal yeast for parmesan.
