Lemon Honey Vinaigrette

Equipment

Ingredients

  • ¼ cup extra virgin olive oil
  • 3 tablespoon lemon juice about 1 large lemon, freshly squeezed
  • 1 teaspoon dijon mustard
  • ½ teaspoon salt
  • 2 tablespoon honey liquid honey works well

Instructions

  • Place olive oil, lemon juice, honey, mustard and salt in a salad dressing shaker or a mason jar.
  • Shake vigorously for a few seconds until smooth and emulsified.
  • Use immediately or store for later.

Notes

Good quality liquid honey will work best for this recipe. 
Don't swap out fresh lemon juice for bottled juice. Fresh is best!
If you like garlic, you can add 1 clove of minced garlic to the vinaigrette. 
This recipe will also work with maple syrup, although the flavor of the dressing will change.
