Polish Apple Pancakes
Polish Apple Pancakes (Racuchy z Jabłkami) are soft, fluffy pancakes filled with fresh apples. This quick version is made with kefir and baking powder—no yeast or rising time required.

- 2 cups milk kefir full or low fat, buttermilk will also work
- 1.5 cup all-purpose flour
- 2 large eggs
- ½ cup granulated sugar
- 1 teaspoon baking powder
- 1 pinch salt
- 1 teaspoon vanilla
- 2 apples peeled, cored and sliced or diced small
- 2 tablespoon vegetable oil or other neutral tasting oil (canola, avocado), for pan frying
In a large bowl combine together: kefir, eggs, vanilla, flour, baking powder and salt.
Whisk together until mostly smooth (small lumps are fine).
Add thinly sliced or diced apples.
Heat 2 teaspoons of oil in a large skillet.
Using a ¼ cup measuring cup, drop batter into the pan leaving room around each pancake. Make sure you get bothe the batter and apples in each pancake.
Pan fry until golden on both sides in batches. Add more oil, as needed, as the pancakes will absorb some.
Serve dusted with powdered sugar.
You can find milk kefir in most grocery stores near yogurt. I used full fat kefir from Lifeway.
The apples should be sliced very thin or diced small. I usually slice them into eights and then cut each piece into small thin slices (see pictures or video).
I like to use firm, sweet and sour apples, like Honeycrisp, Granny Smith or Pink Lady. Any kind of apples will work though.
This recipe makes a lot of pancakes. To speed up the frying process, I usually use 2 large skillets and I fry 4 pancakes at a time in each skillet.
The pancakes will absorb some of the oil as you fry them, just add a little more oil as needed (you only need about 2 teaspoon at a time).
These pancakes are good both hot and at room temperature.
This recipe makes about 18-20 pancakes.
