Spinach, Feta and Egg White Wrap (Starbucks Copycat)
Skip the drive-thru and make this Starbucks egg white spinach wrap copycat at home. Quick, high-protein and perfect for busy mornings.

- 1 lavash wrap such as Joseph's
- ½ cup liquid egg whites or egg whites from 4 large eggs
- 1 cup baby spinach chopped
- 1 tablespoon sundried tomatoes drained and chopped
- ¼ teaspoon garlic powder
- ¼ teaspoon black pepper
- 1 pinch salt
- 1 teaspoon avocado oil or vegetable oil
- 1 ½ tablespoon mozzarella cheese
- 1 ½ tablespoon feta cheese crumbled
- ¼ teaspoon salt
- 1 dash hot sauce (optional)
Heat 1 teaspoon of avocado oil in a medium sized skillet. Add chopped spinach and sun-dried tomatoes. Sprinkle with garlic powder, black pepper and salt.
Cook for a minute or two on medium low heat until spinach is wilted.
Pour in liquid egg whites and cover with a lid. Cook until eggs are set.
Carefully lift the egg white omelette from the skillet and place in the middle of the lavash.
Sprinkle with feta cheese and grated mozzarella, drizzle a little hot sauce (if using) and wrap the lavash like a burito.
Place in an air fryer preheated to 370 degrees or in a non-stick skillet and cook for a few minutes until warmed up and starting to brown lightly,
Serve and enjoy!
Make sure the skillet you are using is smaller than the lavash.
If you don't have lavash bread, you can use a large flour tortilla.
I used cage-free liquid egg whites for this recipe but if you prefer to use regular eggs, separate egg whites from yolks. To make ½ cup you will need 4 egg whites from fresh large eggs.
Liquid egg whites tend to stick to the pan more than regular eggs. Make sure your skillet is non-stick and use some oil (or oil spray) to prevent the omelette from getting stuck.
If you want a version that emulates the Starbucks wrap more, spread a little cream cheese on the lavash (or tortilla) before adding eggs and cheese.
Sundried tomatoes packed in oil work best for this recipe but if you prefer, you can use the dried kind and rehydrate them in water.
