Chicken, Potato and Broccoli Casserole

- 2 lbs Yukon gold potatoes cleaned and diced large
- 3 cups broccoli florets 1 large or 2 smaller crowns, cut into bite-sized florets
- 2 ½ cups cooked chicken breast shredded
- 1 large onion diced
- 3 garlic cloves minced
- 1 ½ teaspoon salt divided
- 2 tablespoon butter or olive oil
- 3 tablespoon all purpose flour
- 2 cups low-sodium chicken broth
- 1 cup milk whole or low-fat
- ½ cup sour cream
- 1 ½ teaspoon Ranch seasoning optional
- ½ teaspoon black pepper freshly ground
- 1 ½ cup cheddar cheese shredded
- 3 tablespoon fresh parsley chopped
Parboil potatoes in water with 1 teaspoon salt for 8-10 mins, then add broccoli and cook for 4 mins.
Saute onion in butter, add flour, add 1 cup chicken broth, thicken, then more broth and milk. Season with ½ teaspoon salt, ½ teaspoon pepper, ranch seasoning.
Place sour cream in a small bowl and add 2 tablespoon of the hot sauce. Stir until smooth, then add to the sauce and whisk together.
Add chicken, potatoes and broccoli to the sauce.
Grease a 9 x 13 casserole dish with butter or non stick spray.
Transfer mixture, top with grated cheese and bake at 400 degrees for 30 mins.
I made this recipe with yukon gold potatoes which work well in soups and casseroles because they keep their shape and don't fall apart easily. If you prefer, you can also use red or white potatoes.
This recipe is a great way to use up cooked chicken breast but any cooked chicken will work, such as rotisserie chicken.
Make sure not to overcook potatoes and broccoli. You want to parboil them but not cook them completely or else they will turn mushy.
Shredded cheddar cheese can be swapped for other types of cheese such as monterey jack or gruyere. You can also use a cheese mix.
