Nothing says comfort food quite like this Cheesy Chicken Broccoli Potato Casserole recipe. This warm and creamy casserole has a mild and cheesy flavor, and is so crowd-pleasing - even my picky eaters enjoy it. Plus, it’s entirely made from scratch. No powder or canned soups here!

Ingredient notes

- Yukon gold potatoes - cleaned and diced large
- Fresh broccoli - 1 large or 2 smaller crowns, cut into bite-sized florets
- Chicken breast - cooked and shredded, rotisserie chicken works great
- Onion - yellow or white, diced
- Fresh garlic cloves - minced
- Salt - divided
- Butter or olive oil
- All purpose flour - gluten-free if needed
- Chicken broth - I use a low-sodium variety
- Milk - whole or low-fat
- Sour cream
- Ranch seasoning - optional
- Black pepper - freshly ground gives the best flavor
- Cheddar cheese - shredded
- Fresh parsley - chopped, for garnish

How to make it: step-by-step

- Step 1: Parboil potatoes.

- Step 2: Add broccoli and cook a few more minutes.

- Step 3: Sauté onions and minced garlic in butter.

- Step 4: Add flour and half the chicken broth. Stir, wait the sauce to thicken and add the remaining broth and milk. Keep stirring until smooth.

- Step 5: In a small bowl mix sour cream with a bit of the warm sauce.

- Step 6: Add the sour cream mixture to the sauce the pot with chopped parsley and stir together.

- Step 7: Add shredded chicken and stir it in.

- Step 8: Now add the cooked potatoes and broccoli. Stir gently to incorporate.

- Step 9: Transfer to a 9 x 13 casserole dish and top with cheddar cheese.

- Step 10: Bake until the top is browned and bubbly.
Storage and Reheating Tips
- To store: Let the casserole cool completely, then cover tightly with aluminum foil or transfer to an airtight container. Store in the refrigerator for up to 4 days.
- To reheat: Reheat the whole pan in a 350°F oven until heated through. Add a splash of milk or broth if the sauce thickens too much.
- To freeze: Assemble the casserole (without baking) in a freezer-safe dish, wrap tightly in plastic wrap and foil, and freeze for up to 3 months. When ready to bake, thaw overnight in the fridge and bake as directed.
What to Serve with Cheesy Chicken Broccoli Potato Casserole
Serve this hardy chicken broccoli potato bake on its own or with a side salad - try it with my Beet And Feta Salad With Walnuts or Butternut Squash Feta Salad.
A side of simple roasted veggies goes great with this too - my top choices would be either Roasted Green Beans And Carrots or Air Fried Carrot Fries.

Recipe Tips & Tricks
- I like to use yukon gold potatoes in soups and casseroles because they keep their shape and don't fall apart easily. If you prefer, you can also use white potatoes or red potatoes. Avoid starchy potatoes like Russets.
- Make sure not to overcook potatoes and broccoli or else they will turn mushy while they bake.
- A great way to use up leftover chicken breast but any cooked chicken will work, such as leftover rotisserie chicken.
- Sub other types of cheese for the cheddar. Monterey Jack or gruyere are great options.. You can also use a cheese mix.
- Feel free to play around with the spices a little to meet your tastes. Add a litte extra garlic powder or onion powder can give an extra boost of flavor.
- You can add some cooked and crumbled bacon to the casserole as well for extra flavor.
Can I use frozen broccoli?
Yes! You can substitute frozen broccoli florets - just thaw and pat them dry before adding to the casserole so excess water doesn’t thin out the sauce. No need to parboil frozen broccoli.
Can I make this recipe gluten free?
Yes! Simply replace the all-purpose flour with a gluten-free flour blend or cornstarch (about 2 tablespoons) to thicken the sauce.

- 2 lbs Yukon gold potatoes cleaned and diced large
- 3 cups broccoli florets 1 large or 2 smaller crowns, cut into bite-sized florets
- 2 ½ cups cooked chicken breast shredded
- 1 large onion diced
- 3 garlic cloves minced
- 1 ½ teaspoon salt divided
- 2 tablespoon butter or olive oil
- 3 tablespoon all purpose flour
- 2 cups low-sodium chicken broth
- 1 cup milk whole or low-fat
- ½ cup sour cream
- 1 ½ teaspoon Ranch seasoning optional
- ½ teaspoon black pepper freshly ground
- 1 ½ cup cheddar cheese shredded
- 3 tablespoon fresh parsley chopped
Instructions
- Parboil potatoes in water with 1 teaspoon salt for 8-10 mins, then add broccoli and cook for 4 mins.
- Saute onion in butter, add flour, add 1 cup chicken broth, thicken, then more broth and milk. Season with ½ teaspoon salt, ½ teaspoon pepper, ranch seasoning.
- Place sour cream in a small bowl and add 2 tablespoon of the hot sauce. Stir until smooth, then add to the sauce and whisk together.
- Add chicken, potatoes and broccoli to the sauce.
- Grease a 9 x 13 casserole dish with butter or non stick spray.
- Transfer mixture, top with grated cheese and bake at 400 degrees for 30 mins.
