You can but I don't recommend it. Ripe bananas have the right soft texture and a lot of natural sugars that are needed for most baking recipes. You want bananas that have lots of brown spots on the skin or that are completely brown, almost black. These bananas are the sweetest and perfect for breads, muffins and cookies.
Not really. Black bananas are still good for baking, as long as there is no mold on the skin. A banana that's overripe will almost spill into the bowl because it turns super soft, almost liquid. That's totally ok! I call it "banana magic".
If you'd like to make any of the recipes above but your bananas are not ripe at all, you can easily ripen them in the oven at low temperature. Here's a good tutorial on how to do this.
Absolutely! I have overripe bananas in my freezer at all times. There are two ways you can freeze bananas: peeled or unpeeled. If you peel them, freeze them whole, in chunks or in slices, depending on what you're planning to use them for. Sliced peeled bananas work best for smoothies and smoothie bowls. Very brown or black bananas are easier to freeze with the skin on. When ready to use, place the frozen bananas in a bowl and leave to thaw completely before using. The inside will essentially liquid which is totally fine.
