You want bananas that have lots of brown spots on the skin or that are completely brown, almost black. These bananas are the sweetest and perfect for breads, muffins and cookies.
Not really. Black bananas are still good for baking, as long as there is no mold on the skin. A banana that's overripe will almost spill into the bowl because it turns super soft, almost liquid. That's totally ok! I call it "banana magic".
